Zucchini Bread


  • 1 3/4 cups of whole wheat flour

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon

  • 1/2 cup of sugar

  • 2 large eggs

  • 1/4 cup unsweetened almond milk or milk

  • 1/3 cup melted coconut oil or olive oil

  • 1 teaspoon vanilla extract

  • 1 1/2 cups of shredded zucchini (1 large or 2 small zucchini)

  • 1/2 cup chopped walnuts (optional)


  1. Preheat oven to 350 degrees

  2. Grease a 9-inch oaf pan with oil, butter, or cooking spray

  3. Grate Zucchini in small holes of a box grater, and set aside. You don't need to drain it.

  4. In a large bowl, combine dry ingredients: flour, baking soda, salt, cinnamon, nutmeg, and sugar.

  5. In a medium bowl, combine eggs, oil, unsweetened almond milk, and vanilla extract. Whisk together and then our wet ingredients into the dry and stir until everything is combined and you have a nice thick batter.

  6. Add the Zucchini and walnuts to the batter and mix until evenly distributed.

  7. Pour batter into prepared loaf pan and top with extra walnuts(if desired).

  8. Bake for 50 minutes or until set through and a toothpick comes out clean enjoy!
